Roasted Bok Choy
serves 4
Ingredients
12 oz baby bok choy, split lengthwise
2 T olive oil
1 t sesame oil
1 T soy sauce
1 t red wine vinegar
1 t toasted sesame seeds
Instructions
Drizzle the bok choy with olive oil and a few grinds of pepper, then roast at 400 6 to 8 minutes.
Whisk together the sesame oil, soy sauce, and vinegar.
Plate the bok choy, drizzle with the dressing, garnish with the sesame seeds and serve.
